Savings by recovering scraps and peelings
With food prices exploding in this new era of inflation, it's important to think differently and start maximizing our food waste. There are obviously more difficult gestures than others, but in this case we are talking about simplicity, you will need a resealable bag or a container with lid and put your peelings and unused vegetable pieces in it and simply put them in the freezer instead of the compost bin or worse in the trash. When it is filled, you can make a vegetable broth for your soup and others recipes.
The saving is still significant if we consider that a liter of organic vegetable broth from the market retails for about $4.50 and a liter of non-organic commercial broth is about $2.50 a $3.00... in addition this liter has become 900ml, well yes ... brands like Cambell's, PC or St-Hubert did shrinkflation lately...
In fact almost the entire industry at the same time made this quantity reduction for the same price except the Imagine Bio brand which is still 1 liter, available at Walmart at $3.27. But for other brands, a liter carton is no longer a liter...so if your recipe called for 4 cups (1 liter) of broth, you have to thin it out with water or buy more!
Regularly pick up your vegetable scraps and pieces and place in a resealable bag or bowl in the freezer. I also collect the first leaves of cabbage or lettuce, usually a little withered.

When your bag is full, you can simply add the contents of your bag with the oil, the herbs of your choice, salt and pepper in the water and simmer over low heat for 2 to 3 hours, but adding an onion and a few cloves of garlic cook and stir in olive oil will make the difference to the broth taste.

In all cases, but especially for meat broths, skim off the fat that rises to the top, that ensures clarity and lightness of flavour.
